Wrap it Up: Egg Flatbread Wrap, March Colorado Proud Recipe of the Month

This month, we are celebrating a powerhouse of local agriculture: the Colorado egg. This month's featured recipe, a versatile and vibrant Egg Flatbread Wrap, highlights the incredible quality and freshness that comes from our state's dedicated producers.

Our state's egg producers are a vital part of the Colorado Proud community, supporting an agricultural industry that contributes over $47 billion annually to our economy. Despite recent challenges like avian influenza, Colorado's egg farms-ranging from large-scale commercial operations to smaller family-run backyard flocks-remain resilient.

Nutritionally, eggs are one of nature's most perfect "superfoods," offering an affordable and complete protein source that is hard to beat. Each large Colorado egg contains approximately 6 grams of high-quality protein and all nine essential amino acids necessary for muscle repair and immune health. Beyond protein, eggs are packed with essential nutrients like Vitamin D for bone health, choline for brain function, and antioxidants like lutein and zeaxanthin, which support eye health.

Yield: 2 servings
Prep time: 10 minutes
Cook time: 25-35 Minutes

Ingredients

  • 2 eggs
  • 1 cup cottage cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp Italian seasoning
  • Salt and pepper to taste
  • ⅛ tsp baking soda

Fun extras: sandwich fixings of your choice - (for club) thinly sliced ham and turkey, cheddar cheese, mayonnaise, mustard, tomato, lettuce and crushed potato chips.

Directions

  1. Preheat the oven to 350°F (use convection if you have it). Lightly oil a rimmed baking sheet then line it with parchment paper.
  2. Add all ingredients except for the baking soda into a blender and blend until smooth. Scrape down the sides of the blender jar and blend once more.
  3. Stir in the baking soda and immediately pour the mixture onto the parchment-lined pan.
  4. Bake for 25-35 minutes, rotating the pan halfway through baking, or until the top is golden brown and the flatbread is dry and firm to the touch.
  5. Remove flatbread to a rack or other surface and allow to cool for 10-15 minutes before using.
  6. Add your favorite sandwich toppings to one side of your flatbread. For a club sandwich vibe, spread a thin layer of mayonnaise and mustard and layer with slices of ham, tomato, lettuce and potato chips. If desired, sprinkle in crushed potato chips for crunch. Roll flatbread tightly and wrap in parchment paper for neater serving and eating.
