A transformation is underway in canned tuna processing

26 Feb 2026

Celebrating the new partnership between JBT Marel and Dongwon which is set to revolutionise the tuna processing industry.

JBT Marel and Dongwon are putting the final machines in place on the factory floor, ready to begin transforming the tuna processing from labor reliant and high waste, to automated and sustainable.

Dongwon is a world leading canned tuna producer, as such they understanded that to create a bright future, they need to be instigators of change. JBT Marel couldn't agree more. Together Dongwon and JBT Marel will pilot a new tuna processing line that utilizes more by-products and increases automation.

Dongwon's facility in Busan, Korea is being installed with a new line that will process tuna raw, turning the processing order on its head, with de-heading, filleting and cutting happening before cooking. This shift means Dongwon will have opportunities to create new product lines, and value streams from high quality by-products.

The processing line has been developed by JBT Marel and Dongwon to revolutionize modern tuna processing, addressing industry needs to improve valorization of valuable raw material, increase sustainability, and address labor scarcity. The new line optimizes primary processes, to reduce the number of employees needed for the traditionally labor heavy production of canned tuna. Once installed it is estimated that the new line will increase the value of the products Dongwon can maximizing the value of every fish.

Both JBT Marel and Dongwon teams are excited to be finalizing installation of the new line and beginning the pilot in the coming months. And look forward to sharing learnings and successes as this transformative tuna processing pilot gets underway.
