LOS ANGELES - Simplicity is at the heart of Beverly Hills' newest extension of the family dinner table at Baldi, a Tuscan steakhouse helmed by Chef Edoardo "Edo" Baldi, opening its doors on February 18.
Situated within the iconic Waldorf Astoria Beverly Hills, the restaurant serves as a reimagination of the American steakhouse through a deeply Tuscan lens. Entrenched in Chef Edo's family legacy, Baldi is the next expression of one of the most formidable family-run legacy restaurants, Giorgio Baldi(a36-year-old Italian culinary heavyweight in Santa Monica), and e.Baldi (celebrating 20 years in Beverly Hills this year). Baldi features a curated selection of prime and Wagyu cuts of steak, cooked over open flame, and complemented by Italian dishes that have been perfected over generations, including several distinct house-made pastas and an impressive wine and spirits program.
Intentionally designed to be a true neighborhood restaurant, guests are immediately greeted by a mural designed by Drawing Room NYC, featuring an Italian dinner party scene before entering the transportive terracotta adorned 180-seat restaurant, replete with a central destination bar, semi-enclosed outdoor terrace with open-air pods, and private dining room built to host special events and celebrations up to 50 people. The tastefully appointed space inspired by Chef Edo's Chianti countryside home offers a minimalist backdrop that allows the culinary experience to take center stage, with subtle light filtering through olive trees and wood touches providing a natural feel to the space.

The Menu: An Ode to The Etruscan Philosophy of 'less is more'
Warm, inviting, and unshowy - Baldi is a restaurant designed to be returned to often, with a menu of simple, nostalgia-driven classics at its heart. An exclusive selection of the world's finest graded beef, including USDA Prime, American Wagyu, Australian Wagyu, and Japanese A5 Wagyu prepared over an olive wood-fired grill with an open window to the dining room anchor the menu, done the Italian way - minimally seasoned with herbs and spices to let the quality of the meat shine.
Diners can select from their choice of thoughtfully procured USDA Prime beef from the top ranches in the United States, including Creekstone Farm (Kansas), Autonomy Farms (Bakersfield), Double R Ranch (Washington) and more. Three distinct styles of luxurious Wagyu round out the steak offerings, including Australia's award-winning fullblood and crossbred Wagyu Tomahawk (Sher Ranch), as well as a curated menu of Japanese Wagyu known for exceptional marbling from Sanuki Kawai, an olive-fed, Kagawa Prefecture, to Takamori drunken wagyu, Yamaguchi Prefecture, featuring sake rice-fed beef; and American Wagyu known for its rich and buttery flavor from Blackhawk Farms (Kentucky) and Snake River Farms Gold Label (Idaho). All steaks are served with Chef Edo's signature house-made 'salsa verde' and tomato-based Italian steak sauces.
